The usual procedure (90% of the time) is that all drivers are weighed on Sat with just those in the trophies being weighed on Sun. On Sat, everyone is usually (again, 90% of the time) directed to the scales right after their final run.
There have been deviations from the above, so do not count on anything stated. Just plan to keep you and your co-driver above min at all times; it's way easier that way!

When I was still driving the Citation in CMod my co-driver and I had an easy to remove 15 lb piece of ballast. It took about 10 seconds to place it and about 5 seconds to remove it.
No one had to run at a disadvantage.
