I have a nut and bolt checklist, a weekend at the track checklist, and a sheet that describes the configuration of the car in all aspects, along with tire pressure data and race session notes.
I use an Excel spreadsheet for tracking work on the car - repairs, maintenance, and upgrades, sorted by urgency.
I have a separate spreadsheet that is purely maintenance; replacement dates on critical bits like bolts and rod ends, with part numbers, sources, and a count of spares on hand.
I have a stack of setup sheets for each event, cataloguing both the initial setup in the garage and changes made through the weekend - all on the computer as well as hardcopies.
Then there's hardcopy grid sheets for every session, covering things like fuel load, fluids checked, tire pressures/temps etc. These all get stapled together with the setup sheet and weekend schedule after every event, and filed away.
Data from the logger gets downloaded usually after every session and checked if not analyzed in detail; video typically gets pulled off the cameras after the weekend, since I don't usually bother looking at it during a weekend unless something notable happens.
