I was replacing the engine oil on my Zetec engine, when I removed the oil plug at the bottom of the pan, this screen came out.
Should this have come out so easily?

Absolutely. The screen is supposed to stay attached to the plug. Otherwise think what would happen
You can epoxy the screen back in. I have made aluminum AN pan fittings this way

Is that just a drain plug? If so, why would it have or need a screen? Or does that connect to the hose to the oil pump?
You should only need a screen on oil pickup(s) that lead to the pump.

It really should not detach from the plug but it also should index into the other side of the pan so it is not gong anywhere
