I was thinking a FV can't even make it to the top, much less race to the top.
What what I can find, Ken Blockhan who ran a Vee with a 1700cc engine in the early 70s. Later he upgraded to a 2180 with a turbo running on alky (below). That probably made it run a bit faster.
I sold a good friends' FV years ago to someone who was taking it to Bonneville. Class record for 1192cc ACVW with SP heads, and a single 28PCI carb is 129MPH. I thought that would be about as exciting as racing one up PP. . . both events are on my bucket list. Won't be an a FV though.
Went to Bonneville with a friend who had a hotted up XK-140 he vintage raced. He ran 180+ with it. It was a lot of standing around in the blazing sun on the salt - make sure you put suncreen on the legs all the way up the shorts, the salt reflects! Ow.

We were racing at Miller and had the day off .
Went to Salt Flats where that Lazer Vee and several other vees were running.
The Utah Speed week has a class for everything including 2 Cycle Barstools.
The fastest Vee thing there were the Tires on The factory Triumph LSR Streamliner Bike
They were using Goodyear FV fronts on Both ends!! I pointed out to the rider
that those tires had never been over 120 for their intended use.
He seemed concerned as we walked away.
Now that Pike Peak is paved to the top more entries are being accepted.
I bet a modern vee may show up, Maybe one of Laziers. Kids.out of Colorado.

I've been a bunch of times with a 125 Partial Streamliner I designed and built half of.
I think we've got 8 records total now with 125cc. Bikes thought. Fastest recorded run was 155 mph. IIRC.
Lots of sun. High temps but dry so not as painful. Altitude and temps reduced hp by about 20% compared to sea level.
Always fun to see all the different machinery and ingenuity.
My friend Michael LeVeque, who is a well known Indiana guy (now in Tennessee), who is probably the best Corvair guy in the world, was approached by a customer a few years ago to build a Corvair for Bonneville. The guy asks Michael did he think he could build a Corvair which would run 140 at Bonneville. Michael said "probably....I've seen 146 down the back stretch at Elkart Lake in my vintage racing Corvair. The class requires stock body and a Corvair motor but they can do about anything with it except a blower, IIRC.
So he built the guys car and they went to Bonneville.
First run out of the box they did about 132 or so. Michael found they were losing 7% to slippage on the salt. They also had to re-jet the carb because of the altitude.
The experienced Bonneville guys said something like "Don't expect to get a record on your first try...nobody does that". But in the end they did get the record on the first try.
