In my D cars I use either Tsubaki sigma o-ring chain, or I think its DID that calls theirs an X-ring. I think they also have a "gold" brand as well. Most, if not all larger than F600 will be using a 630 chain, not sure if the smaller F600s use a smaller size link.
I can't think of a reason not to use a chain with seals. Granted, that doesn't guarantee the chain stays always lubed, but why not go for that extra protection?
Also, I think (and anyone feel free to correct me), most people lube their chains between sessions even if they are x/o-rings. At least that's the advice I've gotten.

Russ, I lube my chain between sessions as well. I also do an inspection for pitted, split, or missing rollers. Once any of those appear the chain is on borrowed time. It also gets a tension check between sessions too.
I use a DID 520 ZVM-X chain. Between sessions, I clean it and lube it with chain wax while it's still warm.

I'll chime in as I've done both ends of the spectrum.
When I road raced a 125cc GP bike we ran very small chains, it was some crazy special size (418 I think) because the 3/4-1hp really did matter. The chains didn't last long.
When I had the DSR we started with a cheap 520 chain but they would be really loose by the end of a weekend. Going to a quality heavy duty O-ring chain solved the wear issue.
If I had to choose between the two extremes I'd give up a horsepower or two to have the longer maintenance intervals. If I were choosing a size I'd err on the side of larger. I'm also not ever going to be going to the RunOffs so I an afford to give up a little.
