I've seen some older Pi units available for pretty low prices, I was wondering if there's any way to adapt them to an ODB-II port for better info on my Track Night play car. Like an adapter harness or something?

Nope.
I don't even think you could make one. The Pi takes analog input from it's sensors, and OBD is digital. You would need something to read the OBD data and covert each output into an analog signal that the Pi could read. And even then, you probably aren't going to get accurate data out of the Pi Dash because it likely has some "smoothing" code to clean up the analog data.
You would have better luck buying Pi sensors or adapting other/existing analog sensors to go directly to the Pi.
If adapting the Pi could be done for cheaper than the cost of a new AIM system, I think we would all be keeping our current setups. In your case, the AIM Solo is a far cheaper solution.
