I know in Rfactor 2 there is a height adjustment button in the openwheel cars so you can get a bit higher or lower.
iRacing allows for driver height, field of view and horizon.

I lower driver height in iracing formula vee about 2 inches to make it more accurate, I know how much front tire I should see.
