Probably large. It is a big tub and the seat will be thick.
You can get an estimate of how much material you'll need with foam packing peanuts, garbage bags and a five gallon bucket. Once you have the volume in gallons convert it to cubic feet and that should help you pick the kit.

Get a big plastic bag and some packing peanuts. Adjust the amount of peanuts in the bag and sit in the bag in the car. When you have the setaing position you want and it seems approximately correct, measure the amount of peanuts using a five gallon bucket.

You gave no indication of your physical size; 150#? 225#?
The peanut approximation is a good idea.
Buy one size larger than you calculate, try a dry fit, delete beads as necessary. End result might be slightly more expensive, but its more expensive to add to a too-small seat than to throw away excess beads.

No idea how big you are but PFM cockpits are rather large so go big on the kit

Seat is complete. Large kit was on the spot. Completed this weekend. First seat I made myself and it turned out great. Follow the BSS instructions, watch the video and have your plan in place. Very helpful. If anyone does this is the future make sure you have help. Two extra set of hands is needed IMO. Man! I left one big butt print! Thank you Ian and Ben for the help!
