I am considering buying a PFM given the current bargins. Does anyone know how many STAR made vs. how many are still out there? Does STAR plan to continue supporting the car and providing parts? If not, will anyone offer parts? Thanks!

Call Star and ask them but I am pretty sure Jay plans on supporting the cars for quite some time.
There are no bargains. Cheap car = needs work.
You should be more concerned about operating cost. These are Atlantic-class cars and while they certainly don't cost as much to run as a 4AGE Atlantic, don't expect to pay FE costs.
There were at least 100 made originally and Jay has made a few since buying Star out. Support was a little spotty for awhile there but quite good now.
