I'm putting a windscreen on the car and had to buy a fairly large sheet of polycarbonate that I need to cut down to the right size. Is there any rule of thumb on how many inches higher than the cockpit opening the windscreen should be?

Kinda depends on how high your head is above that reference point. I've had good luck with little bitty ones less than an inch high. (That is: Going from buffetting that blurred my vision to pretty smooth.) Experiment with a crude implementation and find the minimum height that works for you, then make it nice.
Good luck.
When we made one for our db-1, I took a large piece of poster board from Michael's (thin, firm and flexible) laid'ed it over the entire top section of the nose to where (approx) I wanted it to end and then Jason checked out the line of sight from the seat - we made sure all were at the same angle so the air passing over the nose was NOT disturbed by the screen so it woulds also still pass down the sides ...... with a TS of 151 mph @ Daytona (admittedly draft induced) Jason reported NO wind buffeting yet appears air still reached the snorkel and no loss of power was observed

Sorry I was unclear - did not use a transparent poster board for the template - it was white
