Radiator[s] How big? Brand or manufacture. Fuel plumbing. I seem to remember a diagram [Chris Ross ?] on here somewhere. Can't find it. MC sizes for front and rear and why?

One big radiator in one sidepod and one BIG oil cooler in the other sidepod. Oil temperature and pressure are critical for the crank bearings at 15,000 rpm. Will the old trick of using a GM Air Conditioning condenser work as radiator and oil cooler on these cars? I know that in the past we have used those as oil coolers on some pretty "heavy duty" V-8 race stuff (pre heat exchanger days). It seems like you could use one for water and one for oil and you would never be at risk.

No. Drop down or serpentine style AC condenser will struggle to be woefully inadequate.
The space available in the sidepods or ? is quite limited as well.
There seems to be no "cheap" way to cool these engines, keeping in mind that these engines are run much, much harder than in any motorcycle application, so temps are naturally going to be more, and need serious cooling.

Do a search on ebay for aluminum racing radiator. You will find many low cost solutions.
