Mike was truly an F440/500/600 OG. His cars changed the class and ruled for over a decade.
Unless there's a reason the 7' is the max, I highly recommend an 8.5'. The ability to walk down the sides of the car in the trailer FAR outweighs any negatives of the wider trailer.
I think you would be wasting your time at a Ski-doo/Sea-doo dealer. Would you take a Fit-powered FF to a Honda dealer? I've shipped many Rotax engines. It's easy.

Welcome! It is generally accepted that the 2-stroke/CVT F500s are better for autoX than the bike-engined F500s. The autoX guys are very active on the F500/FM Facebook Group.

Make sure that the kill circuit is open to run and closed to ground to stop. Not sure what type of kill switch you have but they do fail sometimes and I've always found the wiring counterintuitive.
