2 quarts is what I used. Filled until I could touch it with my pinky stuck in the hole;)
Make sure you drain using both drain plugs...
After all is said and done, what brand of transmission fluid and weight are you using?

IIRC, Redline MTL is a TRANSMISSION fluid - not necessarily applicable to our hypoid axle setups. You should check to make sure that you are using an EP (extreme pressure) rated fluid .. whatever it is. I found a short article that shines some light on WHY this is the case.

We've always used Redline Lightweight shockproof gear oil with no issues. Expect leaks.
I always recommend transmission oil not engine oil. As stated in the article Steve tagged, gears shear oil on a molecular level and reduce it's film strength. I do not recommend Red Line shock proof oils because the spherical stuff in the oil to cushion shock builds up in the synros and needle bearings in VW boxes causing drag to increase. Ufnfortunately, Red Line discontinued the oil I used to recommend. Their MTL is ok but costly.
Any oil recommended for motorcycles that have unitized construction; have the engine and tranny share oil, will work for our needs. There are some synthetic 5/50 oils that work really well regardless of outside temps.
I do not fill trannies up to the hole. 1" below the hole is perfect. Any more and the tranny will puke it out. I recommend an oil change about every 4 events. Since we have syncros, brass is worn off during shifting and gets in the oil. Every time you hear a bark or grind there's been some steel thrown in there as well.

I care for 7 Vees. Most forgotten is the reason why there are magnets in the drain plugs of both chambers in the trans axle. Once saturated with metal, the rest stays in suspension in the lube and acts like fine grinding powder. Drain "both chambers" and clean the magnets every other race week then refill with lube of choice. I've found what kills a bang box quicker than anything is free suspended "HARD" contaminates in the lube.
